Firecracker Shrimp Tacos!

For the last couple of days I've been looking at different cooking magazines and different recipes because my husband and I used to cook all the time! We have gotten away from cooking since we got married, I graduated school, and got a full-time job. I've decided that there are no excuses not to cook like we used to!  So, tonight I made a version of firecracker shrimp tacos!

We bought 1 pound of raw detailed, de-veined shrimp at our local grocery store.  We also got a package of small 10 tortillas, a pre-chopped white onion (I like pre-chopped things, it makes life so much easier!), I also got a packaged of garlic that was de-cloved.  I had all the other ingredients already in my pantry and fridge.


Sriracha Aioli:

2/3 cups mayo
3 to 4 tablespoons sriracha
1/4 cup of onion
4 cloves of garlic (I saw different recipes that called for 1 or 2, but I like garlic and it wasn't too over powering)

I used my food processor to blend everything together nicely! I added salt and pepper to taste and some crushed red pepper. I poured it into a dish that I could easily dip the shrimp into. Side-note: I totally could have separated out the sauce to save some to use later, but I forgot and put the raw shrimp in all of the aioli.

After I got the shrimp covered in the aioli, I had some white cornmeal and panko in a bowl. I didn't measure it out, I just wanted to give it a little more texture. We fried them in olive oil (be careful, it pops). If you can't fit them all in the pan at once clean out the oil and get some fresh oil to finish frying them.  As I pulled them out I put them on some paper towel to get some grease off. That is basically all the recipe is!

I sautéed some cabbage, carrots, bell pepper, and mango to use instead of the usual lettuce and tomatoes that go in tacos! It was might tasty!



 My husband, Brandon made some Mexican rice, but I've never known the recipe; I'll have to find out for everyone!
The tacos were so good tonight!  It would have been good to drizzle some extra aioli on the tacos or some fresh salsa!
